Sweet Potato Kale Soup


  • 1 tspn olive oil
  • 2 medium onions, chopped
  • 4oz. Walnut Hills Farm chorizo sausage
  • 6 cups chicken stock
  • 16oz. can cannellini beans, rinsed and drained
  • 4 cups fresh kale, chopped
  • 3 cloves garlic, minced
  • 1 large sweet potato, chopped
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1/4 tspn salt
  • freshly ground pepper to taste


Saute onion, sausage, and garlic in olive oil.  Add potato, bay leaf and stock.  Heat to soften potatoes.  Add remaining ingredients and simmer for another 15-20 minutes.  Remove bay leaf and serve.
