Fig Jam

Ingredients

  • 1 lb. figs
  • 1 cup sugar
  • 1 cup honey
  • 2 lemons, juice & zest
  • 1 T ginger, grated

Instructions

Wash & quarter figs.  Add sugar.  Let stand overnight in a cool place.  Add other ingredients and simmer until thickened.  Process in a water bath.
